Tomato Rosemary Chicken

A happy hello to you, friends and readers.
Last week I shared my mother's birthday dinner with you
and today I thought I would share the chicken recipe I made.

This chicken dish has become a favorite of mine
and if you try it you'll see why.
The ingredients are perfect together
and when you take your first bite 
the flavors will explode in your mouth


12 boneless, skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup call-purpose flour
2 tablespoons vegetable oil
2 tablespoons butter
5 cloves garlic, chopped
1/4 pound prosciutto, chopped
1/3 cup chicken broth
1 tablespoon chopped fresh rosemary
or 1 teaspoon dried, crumbled
12 plum tomatoes, diced
1/2 cup chicken broth

Season both sides of chicken breast halves with salt and pepper.
Place flour on a sheet of waxed paper.
Turn chicken in flour to coat both sides;
shake of any excess and place chicken on another piece of waxed paper.

Heat oven to 375 F degrees.

Heat 1 tablespoon oil and 1 tablespoon butter
in a large nonstick skillet over medium-high heat.
Add 6 chicken breast halves and saute until lightly browned,
about 3 minutes per side.
Place chicken in a 9 x 13-inch pan in a single layer.
Repeat with remaining oil, butter, and chicken.

Bake chicken in heated 375 F degree oven for 20 minutes
or until internal temperature registers 170 F degrees 
on an instant-read thermometer.

Meanwhile, add garlic and prosciutto to skillet;
cook over medium heat, stirring constantly, 3 minutes.
Add 1/3 cup broth and rosemary;
cook 2 minutes, stirring up any browned bits from bottom of skillet.
Add tomatoes and 1/2 cup broth.
Bring to boiling.
Reduce heat; simmer 10 minutes.

Place chicken on a serving platter;
pour sauce over top and serve immediately.

The chicken is delicious with either wild rice
or buttered noodles.

For a smashing party dish,
serve the chicken over a bed of wild and white rice
tossed with sauteed mushrooms.

Your Finlandia dishes are so pretty too. I have a set that I have collected. Some of the pieces were found at estate sales and the Salvation Army. My husband has begun to surprise me with harder to find pieces, as special birthday gifts.

Hubby and I eat chicken almost exclusively.. so this dish sounds wonderful. I don't make too many fresh sauces, usually just put a mushroom soup over it and bake it (REAL organic mushroom soup outshines any of the others in stores- I use Pacifica brand organic)...... but I like the sound of these herbs and the tomatoes in a sauce. Yum. Will have to try it! Marilyn
